What is Sustainable Dining? Your guide to planet-friendly food
Good food, thoughtfully done. That’s the essence of sustainable dining, an approach that values seasonality, provenance and putting in a little more care at every stage of the process. Sustainable dining is about knowing where your food comes from, how it’s prepared and why that matters, and it’s an ethos we’re proud to support.
An appetite for change
In St James’s, sustainability is not a passing trend, but an evolving way of thinking. Our neighbourhood is where some of the UK’s most exciting restaurants are reimagining how we dine.
At Fallow, a root-to-stem approach ensures that every ingredient is used with intention. Over at Scully, globally inspired dishes are shaped by seasonality and carry a deep respect for produce. And at Sael, modern British cooking is approached with care, creativity and a focus on provenance above all else.
Three different kitchens with three different styles, but one shared belief that food that tastes good can also do good.
The Future of Food returns
Each year, we bring these beliefs together through Future of Food, our annual celebration of sustainable dining which returns this May.
For one month, St James’s and Regent Street become a stage for collaboration, experimentation and conversation. Chefs, growers, foragers and makers come together to explore what the future of dining might look like and more excitingly, how it might taste.
St James’s Food Fair
This year, we’re welcoming a new addition to the fold. On Saturday 16th May, St James’s Market will transform into an open-air celebration of food and drink, serving dishes from terrace BBQs and delicious food stalls featuring innovative producers and sustainable suppliers. You'll discover how pioneers are collaborating to shape a more sustainable future of food.
Expect a lively mix of stalls, tastings and live demonstrations from some of the neighbourhood’s most exciting names, with communal-style available throughout the market and live music from The Pavilion band stand.
Where to eat sustainably in London
Throughout May, the Future of Food festival is taking place in St James's and nearby Regent Street, and it comes with a host of one-off experiences that offer a closer look at our neighbourhood’s sustainable names in action.
Sustainable Safari This guided journey takes place on 23rd May, leading you across St James’s and Regent Street. It begins with a sustainable coffee tasting at Compane, followed by a scent experience at Floris before the morning concludes at Quaglino's, where a two-course lunch showcases a thoughtful approach to sourcing. Tickets are still available, but be quick - this event is likely to sell out.
The Sustainable Table: Scully x Flavour Fred At Scully, chef Ramael Scully partners with forager and fermenter Flavour Fred to create a four-course menu shaped by wild, foraged ingredients. Together, they bring an intuitive approach to cooking.
An exclusive sustainable dish at Wiltons and Francos
Head over to Jermyn Street and take your pick of two of London's best-loved dining spots, each offering an exclusive sustainable dish throughout the Future of Food festival. Opt for Italian at Francos or seafood at Wiltons (or go all-in and try both!) and quote 'Future of Food' to your waiter when you arrive. More information available here.
Earth Month at The Nest with Sapling and Everleaf
The Treehouse Hotel on Regent Street is home to The Nest, hosts of a limited edition collab menu between Sapling and Everleaf that celebrates a shared commitment to sustainability. Featuring two cocktails and a mocktail, the menu is just the excuse we needed to visit the rooftop bar and raise a toast or two.
